At the end of last year I was feeling a bit burnt out. Between working, teaching yoga and day to day life with a new puppy, the last thing I wanted to do was make dinner at the end of the day. Neil and I used to make meals together every night when we first moved in together. We enjoyed the planning, experimenting and even the act of preparing the meals. It was our thing. Lately, I have felt uninspired and even started to dread the decision and preparation.
We talked about some ideas for meal prep and with our successful frozen burritos we decided to look into freezer meal prep. We found an awesome post on New Leaf Wellness via Pinterest for making 12 freezer meals from Costco in 75 minutes. We decided to give it a go as we headed into the new year. I loved the printable from the site because it provided a shopping list and all four recipes. We bought everything we needed at Costco and then spent part of a Sunday afternoon prepping the meals. It took us both about an hour.
We prepped all of the ingredients and assembled them into freezer bags that are ready to be defrosted and then cooked in a crockpot. The recipes serve 6 so for Neil and I we were able to eat these meals a few nights during the week. We have now cooked three out of the four meals and enjoyed them all. Our third recipe is currently in the crockpot and smells amazing. Each time we have gotten the crockpot set up at the beginning of a week I feel so much relief in not having to spent time and energy planning meals this week.
We have generally frozen an extra portion of soup or casserole to eat at a later date. This is better for us because it sets up up for the whole work week rather than a just lunch for someone or one meal. I am really excited to look up different recipes and see how we can maximize our prep effort and freezer space.</>
